Umami, savoury vegetable broth. To make the broth we use dried shiitake mushrooms, Kombu Japanese seaweed, charred onions, leeks and more. The broth is seasoned with Aka (red) Miso, soy sauce and mirin. It comes served with fresh ramen noodles, miso-marinated roasted aubergine, tofu, browned onion and garlic oil and garnishes.
